Whether growing your own, buying from the supermarket, or visiting

Come wintertime, glistening jars of home-made preserve will be a
welcome reminder of sunnier days - nothing comforts like raspberry
jam spooned generously onto hot buttered toast! According to our
dear friend, food writer Liz Franklin, a good rule of thumb is 1lb
sugar to 1lb fruit, with a little extra for gooseberries, blackcurrants
and damsons. She says the simplest 'setting test' is to drip a teaspoon
of boiling jam onto a cold plate, allow to cool, then push gently
with your finger to see if it wrinkles. You may prefer a <a href="http://www.acompanylimited.co.uk//is-bin/INTERSHOP.enfinity/eCS/Store/en/-/GBP/DisplayProductInformation-Start?ProductSKU=8776&TGREF=EMAIL20040720">Preserving
Thermometer</a>, in which case, setting point is generally reached
at 104°C/220°F.</p>
