To keep their essential nutrients and delicious crunch 53 intact, steaming is by far the best way of cooking. 156 Come wintertime, glistening jars of home-made preserve will be a 157 welcome reminder of sunnier days - nothing comforts like raspberry 158 jam spooned generously onto hot buttered toast! According to our 159 dear friend, food writer Liz Franklin, a good rule of thumb is 1lb 160 sugar to 1lb fruit, with a little extra for gooseberries, blackcurrants 161 and damsons. She says the simplest 'setting test' is to drip a teaspoon 162 of boiling jam onto a cold plate, allow to cool, then push gently 163 with your finger to see if it wrinkles. You may prefer a Preserving 164 Thermometer, in which case, setting point is generally reached 165 at 104°C/220°F.

Liz Franklin's Raspberry Jam - Makes approx. 169 6lbs
3lbs fresh raspberries
173 3lbs granulated sugar
1Check over your raspberries and remove the stalks. 178 Place the sugar and fruit in a jam pan such as the Stainless 179 Steel Preserving Pan and leave to stand for several 180 hours so the juice runs and sugar dissolves.
2 Slowly bring to the boil. Continue a good rolling boil for 185 4 minutes, then begin the setting test. Take care not to over-cook.
3 Cool for 30 minutes. Stir well, and then pot. 'Pretty 190 Preserves' labels and jar covers give a lovely finishing 191 touch to our range of Jam 192 Jars.
